Greek-Style Stuffed Calamari with Vine Leaves
Cooked in collaboration with my good friend Kathy from ‘Sweet Greek’, this recipe is a beautiful harmony of the sea and garden. Fresh local calamari combined with simple flavours of mixed seafood, seasonal aromatic herbs and the beautiful spring vine leaves.
Greek Spoon Sweet with Sour Cherries ‘Vissina’
Greek spoon sweets are a famous delicacy in Greece and a traditional way of preserving seasonal fruit and veggies. One of my favourite ingredients to use are sour cherries. They are slightly tart, juicy and pair so beautifully with yogurt, ice-cream and of course are amazing just on their own.
Greek Spoon Sweet with Caramel Figs ‘Sika’
This is my twist to Greek spoon sweets using a caramel syrup which takes the preserved figs to another level. A great way to use young figs that are sacrificed from spring pruning and those that dont ripen on time in winter. They are amazing with cheese, yogurt, ice-cream and so good just eaten as they are!

Cretan Village-Style Calamari with Fresh Greens & Herbs
This beautiful Cretan dish is a delicacy and traditionally made with cuttlefish 'soupies', fresh seasonal greens and aromatic herbs that grow wild in the village. I found super fresh whole calamari at the market which will fit perfectly in one of my absolute favourite dishes.
Yiayias Cretan Style Zucchini ‘Pie’
A rustic bake my yiayia would make multiple times throughout summer, making the most of those overgrown zucchinis always lurking in the fridge. It’s a simple, unfussy dish built on fresh, seasonal flavours. The kind of dish that tastes even better than the effort it takes.
