A hardy perennial herb, like its cousins oregano and marjoram. Prefers free draining and rocky alkaline and will grow in full sun or part shade.
Originating from from the mountains in Jerusalem. It has a robust yet floral flavour and extremely aromatic.
Most commonly used in the spice mix ‘zaatar’ with toasted sesame seeds and sumac and is a fantastic addition to meat marinades and dressings.
Harvest blooms when they start to flower and dry for use. The delicate leaves are also fantastic to use fresh in salads.
